Chef's Diaries: Post Training Pollo Cacciatore

Pollo Cacciatore, when translated from Italian means Hunter’s Chicken. This dish is extremely simple to prepare and very good for you.

Ingredients:

·      1 white onion, sliced

·      1 handful of black or green olives, stoned

·      1 can of plum tomatoes

·      2 peppers, orange & red

·      1 pack of chestnut mushrooms

·      5 pieces of chicken thighs (or drumsticks)

·      Flat leaf parsley

·      Extra virgin olive oil

·      Salt

·      Pepper

Protein: 80g

The chicken (thighs or drumsticks) is pan-fried, then slowly stewed in a rich and flavoursome, tomato sauce. With around 20g of protein and 11g of fat per portion, this is the perfect dish for after a workout or training session. An amazing combination of taste and nutrition, without the extra calories. Belissimo.
